MEET THE BIG CHEF STEAKHOUSE TEAM

Big Chef Steakhouse is located in Rodney Bay Village, Saint Lucia’s tourism hub, renowned for its beaches, shopping, restaurants and nightlife. Big Chef is within walking distance of many of the island’s hotels, a short drive from the picturesque town of Gros Islet and the high end enclave of Cap Estate.

Big Chef Steakhouse is owned and operated by husband and wife team, Marc and Rosie Joinville. Chef Rosie was a top student at London’s Cordon Bleu Cooking School. With her diploma in her pocket, she travelled the world, cooking on a floating hotel in France, hotels in Hong Kong and even on a sheep farm in Australia. On return to London, Rosie was teaching at the Cordon Bleu, when one of her students offered her a job – he was a restaurateur in Saint Lucia. Her wanderlust tempted again, Rosie packed her bags and set off to begin a new career in the Caribbean. She ran several restaurants on the island, including the legendary San Antoine, and taught Culinary Arts at Sir Arthur Lewis Community College, where she helped to set the Associate Degree programme. From the prestigious resort kitchens of Windjammer Landing, to the pages of SHE Caribbean Magazine, Chef Rosie has proven she can do just about anything in the kitchen. At Big Chef, she makes all the wickedly rich desserts!

Culinary talents aside, Chef Rosie is also a convivial and friendly hostess, and her friends will tell you that’s not confined to the realms of the restaurant. Rosie is a true people-person. “It’s not just about eating well,” she says, “people must have a good time too”. With her sense of humour and fun, Chef Rosie Joinville cultivates a welcoming, friendly atmosphere at the always fully-booked Big Chef; she knows every customer, at least after the first time, and truly excellent service is at the heart of her success.

A self-proclaimed perfectionist, Marc Joinville’s management of the Big Chef machinery looks effortless, but it’s the result of many years in the hospitality industry. Marc studied at Cesar Ritz School of Hotel Management in Switzerland and first worked at The Baur Au Lac Hotel in Zurich. After a post-graduate degree in Halifax Nova Scotia, he returned to his native Saint Lucia, and went on to hold senior hotel management positions at Jalousie Plantation, Sandals Resorts, Windjammer Landing and Coconut Bay. Marc also spent time in Sandals Jamaica, Turks & Caicos and Antigua, before teaming up with his wife, Chef Rosie, to take over and re-vamp Big Chef Steakhouse in 2007. The rest, as they say, is history!
